They sacrifice taste and ethics for price - happens in all supermarkets pretty much. The taste part is true for fruit/vegetables as well. For example, the sorts of apples sold in supermarkets are usually high volume and disease resistant varieties. But they taste yuck. Another example is persimmon. This is what the supermarket varieties look like:



Large, seedless and shiny, but apart from a bit of sweetness this variety is pretty much tasteless. Nicer varieties are small, saggy and not so shiny. They also sometimes have seeds:



The taste can be very distinct e.g. some varieties have a very dry taste that's difficult to describe. But very nice
While I have no real care for the well being of the chicken you can taste the difference.
