I get the basic idea of an internship (Or at least I think I do): You do a period of work a workplace (be it a publishing house, a carpenters etc) and get some experience, contacts etc. But is that right and when would I do it? After college? During uni? After uni? Please help!

You can do it after college yes, during uni... perhaps not, you can do placements (either 6 months or 12 months) as part of your course. I'm doing one at the moment as part of my course.
Between university years it is also encouraged to do internships during the summer.
After uni you can do them I guess but at that stage it would be ideal to have a few internships under your belt and applying for graduate jobs by then.
