Rhyolite's higher rate of viscosity decrease means stronger, faster eruptions beneath earth's surface; hence taller volcano forms over time. As it's more viscous it doesn't take as long to solidify, so less spreading eitherside of the central vent. Converse applies to Basalt; thus a shallower, wider volcano.
