Explain how acid in the stomach increases the efficiency of pepsin?

the optimal pH for pepsin is very acidic, around pH 1-2. the pH of stomach acid is close to this, meaning that pepsin enzymes work most efficiently in the stomach (i.e. they catalyse breakdown of proteins most quickly).

bile emulsifies fats (breaks globules down into smaller emulsion droplets). breaking them down into droplets increases the surface area available for lipase to break down lipid molecules into glycerol and fatty acids.
