Because grouping people together is easier and a short cut.

The word 'Asian' is very ambiguous anyway. Many people seem to use it in Britain to mainly mean 'people of the Indian subcontinent' whereas in the US it mainly means 'people of Chinese descent or the countries surrounding China in SE Asia'. Also, Asia is a huge continent and includes all sorts of people not even regarded in normal conversation here as 'Asian'.

Personally I think we should stop using 'Asian' to describe people, at least until people start making the effort to accurately identify where people are from and think about the subject.
The term "Middle Eastern" isn't ambiguous though, so it makes no sense to be calling Pakistanis and Afghans Middle Easterners. That's just lazy and doesn't reflect well on the mind of the person who does so.

We're not allowed to say certain words so we group y'all together under the ones we can.

Plus, Asian is less hassle to say than middle eastern.. like kiwis, yanks, brits.
It's very easy to categorise people properly without using derogatory language,

The ones who use it seem to purposely want to discredit a whole race of people by grouping them with a race that is not as awesome as the persons actual race
That makes no sense at all. If you're offended because you think that Asians are beneath you then I don't see why anyone should care.
