    i dont think they would smilingmaniac you could always call up head of admissions and ask.. they are usually quite helpful with specific questions like that... or i think you could ask you school to explain in you reference that you originally had the grades but just wanted to boost your ums generally...

    If you don't cash your grades in after the first year will the universities know?

    well we didnt decide to not cash in grades our school did, but they will know because then on your UCAS you have to put pending for all your grades because technically they dont exist until they are cashed in, so the school has to write in your reference that its their policy to not cash in results till the end of the A2 year when all module grades have been achieved, and universities seemed fine with having predicted grades, no one got rejected because they didnt have real grades on their application. dont know if that helps....
