Work through all the exercises in Rudin's Real and Complex Analysis and you'll be well prepared.

I don't think it would be essential. Some uni's offer a more mathematics based economics BA than others. Warwick, LSE being an example.
Anyone think it would be a bit too much work to cram in to 1 year?

The universities don't think that, put it this way, you can cover the material now or later. I would do it now and get the extra A-level as a bonus.

PS: I did Further Maths in a year, self-taught half of it and did just fine.
