    * Glutamic acid (an amino acid) and its salts:
    o E620 Glutamic acid
    o E621 Monosodium glutamate, MSG
    o E622 Monopotassium glutamate
    o E623 Calcium diglutamate
    o E624 Monoammonium glutamate
    o E625 Magnesium diglutamate

    * Guanylic acid (a ribonucleotide) and its salts:
    o E626 Guanylic acid
    o E627 Disodium guanylate, sodium guanylate
    o E628 Dipotassium guanylate
    o E629 Calcium guanylate

    * Inosinic acid (a ribonucleotide) and its salts:
    o E630 Inosinic acid
    o E631 Disodium inosinate
    o E632 Dipotassium inosinate
    o E633 Calcium inosinate

    * Mixtures of guanylate and inosinate:
    o E634 Calcium 5'-ribonucleotides
    o E635 Disodium 5'-ribonucleotides

    * Maltol and ethyl maltol:
    o E636 Maltol
    o E637 Ethyl maltol

    * Amino acids and their salts:
    o E640 Glycine and its sodium salt
    o E641 L-Leucine

    Chemical additives aside, there's a variety of 'magic' ingredients, depending on the food:

    cheese; soy sauce; Lea&Perrins; dijon mustard; salt and pepper; Nando's hot sauce; All-Purpose seasoning; garlic mayonnaise; my grandma's spicy chutney/coleslaw; Bisto gravy powder; Oxo stock cubes.

    dulche de leche; Nutella; cream.
