I would spend 8 weeks in nepal volunteering, treking huge mountians ( everest or anapura) , paragliding and bungee jumping of one of the biggest in the word! I man actually do this next year....

New Zealand.
Cheap economy flights. I'd stay somewhere cheaply, possibly living with a family or in a bedsit or something.

I'd like to work - preferably in a stables or ranch so that I could take a horse out on my days off and explore.

Bah, save money and organise it yourself.

2k will go a hell of a long way if you stay away from organised tours.

I'd get three mates, rent a camper van or one of those massive motorhomes for like £500 for 4 weeks (maximum).
Then I'd travel around Europe... Obvious destinations would be Amsterdam, Prague, Berlin and Paris.

Get your mates to dib in for the rental and petrol + Spending money.

Think you would have a great time!

Road trip around the UK and Ireland, would be great to have one extended holiday with no need for any form of flights.
