Because no one knew about Dinosaurs when they were written. They knew about other animals though, hence the reason they are included in the bible in the parts about creation.

Back to the dinosaur topic: read The Noble Quran, 2:164. this should sum up. sure it doesn't say dinosaurs specifically but it does mentions all kinds of living things dotted around the earth.hope this helps.

In the book of job dinosaurs are mentioned. They are referred to as 'behemoth' and were described as kingly, gigantic beasts. “Look at the behemoth, which I made along with you and which feeds on grass like an ox. What strength he has in his loins, what power in the muscles of his belly! His tail sways like a cedar; the sinews of his thighs are close-knit. His bones are tubes of bronze, his limbs like rods of iron. He ranks first among the works of God…”
Scientists have identified these as either hippos or elephants, but neither have the tails that are described in the book of job.
However, some believe these 'behemoths' may be made up creatures as there is a broad and diverse use of the term 'behemoth' in the bible.
