Simple distillation is to get 1 fraction from the mixture, for example with a mixture of ethanol and water you would use simple distillation and would collect the ethanol.

Fractional distillation allows the separation and collection of many different fractions of the mixture. The main example is crude oil distillation where at different temperatures through the tower you collect different sized molecules used for different things.

If you have a product containing many different compounds such as crude oil (which contains many different sizes of hydrocarbons), you would use fractional distillation to seperate the hydrocarbons as they each have different boiling points and therefore would condense on different fractions up the tower. You would use simple distillation if you're only distilling one gas.
