So basically...I've applied to 'UCAS Apply' 'through an individual' rather than 'through a school/college' -- will it make a difference? If so, what?

Not massively; whereas your teacher would have written a reference and sent your application off for you, now you'll have to sort yourself out with one and submit it yourself.
