It is a difficult thing to do, but I think the best bit of advice is not to panic! Take your time when you first read the text. Think about key points, like theme, structure, effect, context, style, and so on. Pick out the key points that are most relevent to the question, and get the structure of what you are going to write clear in your head before you start. Don't just pitch in and hope for the best! Presumably you've written essays before, and the premise is the same, you've just got to be able to think on your feet. Maybe you could pick some texts you've never seen before and pull out key points as revision? Good luck with it, anyway.
