Your "must have" vegetarian dish watch

    I'd like to eat less meat and learn to cook some vegetarian food. What are your staple/favourite veggie dishes?

    Portobello mushrooms stuffed with goats' cheese with a basil and parmesan crust. delicious.

    vegetable curry.

    Open two tins of tomatoes.
    Fry onions.
    turn heat down and then...
    add two heaped table spoons of pataks curry paste (the madras one).
    Stir in until it starts to stick.
    Once it starts to stick throw those tinned tomatoes in straight away (hence you opened them first).
    Chop and add peppers, aubergene, pea's, whatever takes your fancy.
    Once you feel it's done, serve of course with rice.
    I just woke up so if anythings missing...that's why.:\

    I do an absolutely awesome mushroom lasagne. It has 2/3rds of a bottle of white wine in it

    Has to be made totally from scratch though - no premade sauces, and you really have to use specialist mushrooms and fresh thyme rather than ordinary white buttony types and bottled herbs to get the best flavours :coma:

    Grilled halloumi salad with roasted stuff (tomatoes, onions, peppers, green chillies) with a bit of lemon juice. :coma:

    Mushroom risotto
    Quorn-y lasagne or chilli or bolognese
    Feta, spinach and pinenut pie / tart thing (although I have to have money for that!!)
    Chickpea daal
    Faked puttanesca sauce with pasta (obv no anchovies if you're veggie)
