Basically I have sat FP1 once and then again and again.
    1st time = 59%
    2nd Time = 63%
    3rd time = ?
    Which result will they take?

AFAIK they will take your highest score.

If you take it a third time, you will lose your 1st result and they will take the highest result out of your 2nd and 3rd scores.

The exam board will always take your highest score, UNLESS you get you paper re-marked in which case your old mark is scrapped and they start marking it again, therefore meaning you can also go down grades as well as up.

But, to the point .. The exam board will take your highest mark. I hope you do well!
