I just did the AS level, and am quite glad I didn't choose to do the full A level (mainly because I find Physics excruciatingly boring!). I think it is possible, a friend of mine is doing it in one year, and the only trouble for him (except the quality of teaching at AS) is when you're covering bits in A2 which are based on AS knowledge.
Did you carry on French A-level then?
Just like you, I was considering applying for Maths at Cambridge and wish to drop two of my As subjects (History and English Literature). I know it's not a disadvantage not having Physics A-level, but would it be seen as an advantage having it? That's what worries me...

I did, when I was at a Cambridge open day I asked the DoS at Christ's about my A level choices and he said French was fine as I was doing Maths and FMaths, so I don't think there's too much of an advantage of having Physics. A friend of mine applied for NatSci and he's doing Biology, Chemistry, Physics, Maths and Geology, got all A's at AS and they still didn't take him, so I don't think there's a clear yes/no when it comes to subjects.
