Just tell them you're working towards it, as a poster above said, the certificate will almost certainly have the date on, so you'll get found out anyway.
I am taking my BTECs and A levels this year.
At the moment I am at PASSes with BTECS, working on Merits now, I think I may get Distinctions by the end of the year.
I put everything as PENDING.
However head of college had to complete his form as a referal and he put those BTEC subjects as Mertis and A levels as C.
Does it means that Unis will look at my application and say, this guy has merits, we are looking for students with distinctions ?
I applied to 4 challenging unis, where I would have to get distinction in engineering and B in maths.
The other uni I've applayed to asks for BCC, so Merits that would be fine. However I'd prefer to go to one of these more challenging unis.

Read my post in your previous thread about lying. You haven't passed your qualifications yet, so you can't claim to have a Pass in them. Your grade is Pending and your application should state this.
Put simply, you can't lie on your application. Your referee puts down predicted grades as it is.
If you've applied to universities already, then just wait. Nobody here can say what the universities will come back with after looking at your current grades and predicted grades, combined with their entry requirements or guidelines.
