I might not want to do the subject I applied for this year; what are my options based on clearing, or just applying again next year.
I'm going to take a week to think about it in full, and then will decide. Basically, Will I just decline all my offers, or should I go to University and then decide, or can I use clearing to change courses?

You can use Clearing, but might want to consider UCAS-Extra. Or if you're happy with the unis you've chosen you could ask them to consider you for a different course.
