    You should try to think of someone you know who can comment specifically on skills you have identified as important to the job you are applying for. So in this case, things like attention to detail, rule following, organisation etc.

    A referee can be anyone who knows you from a position of authority, teacher, lecturer, tutor, sports coach, music teacher, volunteer leader, choir master, DofE leader, faith leader, cadet officer etc.

    Your referees should not be listed on your CV, but if you think it is important that you present referees before they have been asked for, put them in an additional sheet to follow the covering letter.

    I am applying online for jobs as well, will I have to provide referees?
    If so, do the referees have to be employers or your formers teachers?

    Follow the instructions in the online process, it's exactly the same. Many will ask for referee details. The company/form may well say who it wants ie last employer, teacher, provide them if you can, if you can't provide someone else and explain why.
