For my RE PGCE interview, I have to give a 5-7 min presentation on a topic related to my degree studies. One of the suggested topics was the problem of suffering and evil, which I am doing. However, I am worried about it because in 5-7 mins I cannot cover all the issues, so have chosen to do just a couple. Also, in that amount of time I cannot go into too much detail or depth, and I'm worried that the presentation will be too simplistic. Will this be a problem - are they testing your knowledge, presentation skills, or both?

They are most likely testing your subject knowledge and how well you can present your ideas to a group. It's one of the ways they see what kind of teaching style you have.
