I need to bulk up my legs.
I go to the gym on Tuesday, Thursday, and Sunday. I usually work my legs and shoulders on Sundays. My leg exercises include squats, leg extension, and leg press. I also kick box on Monday and Wednesday.
Could I squeeze in legs on a Friday, or would I not be giving myself sufficient time to recover? Don't really know much about weight training, so any general advice is also welcome.

Try squatting 3x a week with at least one day of rest in between, eg Mon, Wed, Fri.
Leg presses and extensions are nowhere near as good.
Just make sure you keep your macros up and keep pushing yourself with the weight.
I saw pretty good gains doing this as part of SS.

Eat tons inbetween and you should recover ok.

You can work your legs 7 days a week if you want to. It just depends on how much work your body can tolerate and how you plan out your loading and volume.
