You hear that x investment bank has particularly strong NRG and TMT desks (for example), but are these 'rankings' documented anywhere (league tables of some sort), or is it just known by those in the industry?

Team specifies league tables are subjective. There are desks that make tons of money advising on deals you never hear about - not necessarily small, just the parties not wishing to disclose. These are usually non-M&A advisory mandates (i.e. JVs, concessions, etc.).
But anyhow, the bonuses at the junior level are entirely performance, and non PnL, based.

Mergermarket offers league tables for different geographies and sectors, and I'm pretty sure Dealogic do too, but those are services you have to pay for. Thomson Reuters is free, and also offers industry-specific analysis in their Intel reports, and if you look at all their reports over the past how ever many quarters/years you can see which banks have been strongest in certain industries. For example, from the TR reports I know DB was the top bank in Announced Deals in FIG this year.
