    For AS Level I'm taking Maths, Physics, Geogaphy, Art and Critical Thinking.
    If i took geography, maths, physics at A level and either history/english language as an extra AS would it still be possible for me to apply for Law at Oxford??

    Yes. No one will mind about you dropping Art at AS, if that's what worries you.

    Maths, Physics and Geography is fine without the extra AS.

    If you are determined to take an extra AS then as you probably know History is more respected than English Language.

    Depends if you write essays in it! I didn't take it so I don't know. But Oxford don't require that you have taken an essay-based subject. People have got in having taken all science subjects. Taking an essay based subject at A level helps you with the LNAT and to get up to speed with all the essays you have to write during the degree, though.
