Rennin on milk follows the same pattern as every other enzyme-mediated expt, with a peak at the optimum temperature (a cow is 40C) and then a decline as the enzyme denatures.
Clotting time would be hard to measure,as you need to keep a range of temperatures (min 5) constant throughout.
I'd suggest concentration of rennin was a far easier expt to manage than the temperature - or use pH.
