I am in Year 12 and my chemistry teacher has set my target for next year to an A*. Not that I think I could get it mind, but it would be nice to consider depending on my AS results in August. She mentioned several universities that will be changing their standard offer to include an A* from next year, such as Oxford and Bristol. What others will be changing theirs to include an A*? Does anyone have a list? Bear in mind I will be applying for Physics, so I'm not sure what course she was talking about for Bristol as their standard offer for Physics is currently AAB so I can't see that increasing by 2 grades.

Hard to tell - there isn't a list yet and won't be until all the unis next year finish making offers, because all 'typical offers' are subject to change if the unis feel they can ask for higher or can't afford not to ask for lower (competition, basically.)
Assume that any asking for it this year will also be next year, so Cambridge, Imperial, a few others (you could find that information out.) I have read Oxford are intending to start, maybe a few of the other 'top' ones will start - Durham, Warwick perhaps...

Few of the top unis, I think. Oxford is definitely intriducing A* next year.
