You seem to be eating a lot of sugary foods. They'll give you a lot of energy very quickly, so you'll be fidgety or bored or suddenly full of beans. However, they don't provide long-term energy - for that you need carbohydrates. Maybe you're not eating enough of thesee?
Eat regular, large, carbohydrate-rich meals and don't be tempted to snack cause your body will release lots of insulin to deal with the rise in blood sugar, which will (I imagine) over-compensate and your blood sugar level will temporarily fall. Also, try only going to bed when you're properly tired - not just a little weary (like I sometimes do). That way, you're more likely to sleep deeper and will feel more refreshed. Don't skip sleep though!
Have you got a lot on at the moment? Having a lot on your mind or a lot of work to plough through can stress you out, so you don't sleep properly or as deeply. Does a pile of homework make you more likely to grap a biscuit/cake etc? 'Comfort eating' can make you have too much sugary stuff, in my experience.
