If say i'm applying for become a sales assistant at sainsburys or something equivalent do GCSE or A level grades make much of a difference when they decide who to employ? or is it more about showing that you have certain qualities in an interview or on your CV?

It is almost nothing at all to do with your qualifications and almost all to do with demonstrating that you have the relevant skills for the job.
