At the moment I'm in my first year of sixth form doing 3 A-Levels.

Next year, I'm going to pick up an AS in Computing.

After I finish my 2nd year, I was wondering if it's possible for me to continue AS Computing into A2, and do a 3rd year of college, and possibly pick up a couple of AS subjects just to fill the remaining time of 3rd year.

That means when I leave colly, I'd come out with 4 A-Levels and possibly 2 AS grades?

You think my college would let me do that?

usually dont let that many people do a 3rd - year, as there's not funding for everyone - especially with the cuts now...

Ask them. You could also ask if you can take it in one year if you'd rather not wait (though maybe not the additional AS levels too)
