There'll be a couple floating around, best to ask your school/college and your economics teachers.

The Gifted-And-Talanted stuff is meant to be quite good, from what I understand (which TBH isn't an awful lot).
There are Sutton trust summer schools - which is an effort to get more people into uni who wouldn't normally. They like state schools, low-income families, and ethnic minorities. They give you a weeks summer school - specific to your subject. They're done by several unis, Oxford and Bristol are amongst them - don't know where else. They swap round each year as to which subject is at which uni, so you wouldn't necessarily get Oxford/Cambridge for law, but all the same, it would be a good course to write about on your personal statement!
There's also the Oxford Access scheme, which I went on, for biology, which was brilliant, and obviously gives you the chance to look round the city and experience the actual lectures that you would be having if you went there.
