It is 15-20 minute walk or 10 minutes on the bus. Walk to Picciddily Gardens and get a bus from there, a 42,142, 43, 143 is the best bet although the 85/86 will do depending on where abouts the interview is.
If you can, get off the train at Oxford Road and then its 10mins-ish walk straight down Oxford Road to main capus.
If you can't do that, and you do have to get off at Picadilly, without knowing if you are familiar at all with manchester, i'd get a cab from outside picadilly station. it'll only be a few quid max and saves getting potentially lost.

I went to the Manchester open day having never been to Manchester before, getting the bus was OK.

Basically walk straight down the road away from the station until you come to where all the trams and buses are (Picadilly Gardens). Then get on a bus which looks like its heading back in the direction of the station (but not on the same road).

Or if in doubt, ask directions when you're there!

Well the estimates above are presuming not much traffic. At peak times the bus can take 20 mins or so to get there.

If you walk basically straight out of Picadilly station (following the signs to it in reverse) you'll get to Picadilly gardens where all the buses are (look for the fountains in the square), and it's hard to get the wrong one considering so many go down the main road.

On my open day the physics department met me at the station with a big sign and a coach waiting

the north campus is 10 minutes away, but I think economics is in the mail campus which is about 25 minutes walk. walk to picadilly gardens and catch any bus. most go to uni, there are some trick ones that turn off to chorlton just before the uni so Id double check with the driver.

Anything with 4 (apart from the 84) goes to the universities. The 85 and 86 go to Chorlton and turn right just before the university but if do get one of these buses make sure you get off outside the business school and bridge that says Manchester University on it. You will only have a 5 minute walk then.

It is best just to stick with the 42/43/142/143 though these buses are very few seconds.
