Probably because you've had the usual number of hours sleep by going to bed early. If you usually go to bed at say 3 and get up at 10, then you start going to bed at 12 you will get up at 7. The body is to giving you X number of hours sleep, so if you go to bed earlier, you'll wake earlier.

The same thing happens to me when I work during the holidays. When I work I get up at 6, and then on the weekends I end up getting up really early because my body is used to only having say X hours sleep. Usually I can go back to sleep for a couple of hours, but not for long, as I just can't sleep for much longer because my body isn't used to it with all the early mornings.

If you don't wanna be up this early, you could try going to bed later. Why do you want to go to bed earlier anyway?

If you need more sleep, in time, you'll get used to the adjustment like I do when its back to term time. If you wanna sleep for longer, when you wake up, just go back to sleep, then you're body will get used to sleeping for longer.
