I've given myself a bit of a project: to try to replicate a cake that I bought at a farmer's market and absolutely adored!

Now, I'm sure the cake has icing on the top, so I made bog standard icing (icing sugar + lemon juice), but it's not the same as on the cake. It tastes too...metallic. I might be that I should be using lemon essence instead of juice perhaps? Or maybe it's the icing sugar? Does anyone have any ideas on how to make icing that doesn't taste so metallic?

P.S. It's not a cream cheese frosting I'm trying to replicate, so I think I'm along the right lines.

I assume it was the texture of normal icing sugar + water/other liquid (and not royal icing or some kind of buttercream frosting), so I'd just try different things for the liquid...vanilla, fresh lemon juice, milk, etc. I usually make it with at least some water as well as the flavouring.
