My UCAS application was "unsuccessful" at my top choice school. I'm from the US and my grades in APs, SATs, and the ACT all meet requirements but the university asked for three APs or three SAT subject tests and I was short one SAT subject and have yet to take the last AP. I've signed up for two more exams in hopes of being further qualified on my application. If I tell the school I was rejected from of this change, is there any way I might be able to appeal?

Email them. They might change their mind, but they might not. You don't really "appeal" as such, just update them with the new information.
