I've received four offers from universities, however I really want to study at leeds!
It's a foundation to progress onto a degree programme (science) within the university and would be ideal.
Basically, the careers advisor got a bit mixed up, and thought my application had to be sent off by the 15th as I had to specify I was aiming to study medicine after the degree. It didn't need to be sent this early.
I contacted leeds mid-November and they informed me I had an interview, and details would be posted soon.
So I receive the letter in December time, but I've noticed that others on here, who applied later, have interviews in February, however mine is in late March. - does this mean anything?

It means nothing. They could be doing interviews alphabetically, or even just had a big pile of applications and the new ones went on top - so as an early applicant you were at the bottom.
If they weren't interested in you they wouldn't waste their time inviting you to interview.
