Why can water and salts only pass through the symplast?

Hello, could somebody answer the title question please? I missed the lesson and I don't know what a symplast or apoplast is. Thanks!

Water travels normally through the apoplast pathway however when it reaches the casparian strip it cannot go through and then has to go through the symplast pathway from there onwards
