'...because sea couch grass has underground stems, it helps to stabilise the sand. With more stability and accumulation of more nutrients, plants life sea spurge and marram grass start to grow. Marram grass if special: its shoots trap wind blown sand and, as the sand accumulates, the shoots grow taller to stay above the growing dune. This traps more sand. As the sand dune and nutrients build up, other plants colonise the sand, such as hare's foot clover and birds foot trefoil...'

I get that the sea couch grass stabilises the ground due to the underground stems but this stability won't last if the sea couch grass aren't there any more. So how are the sea spurge and marram grass able to replace it and survive there when the stability isn't there anymore? And also why is the buildup of sand (caused bu the marram grass) needed for the hare's foot clover and birds foot trefoil to grow there?

The marram grass will add nutrients to the ground as it dies and decomposes

the nutrients provide a medium for something else.
you dont need to analyse exactly every word. By stable, it means that something else is replaced there rather than it dying and bam nothing.
