I'm doing CIE AS german at an international school in South Africa

I have loads of notes and mini essays, grammar exercises and vocab lists that I've done but they are pretty messy. My paper is flimsy and the hole punches are ripping etc.
My writing is also not that nice to study from as its kind of messy and I don't structure things nicely on the page.

Is it a good idea to type everything up? Or is it a bit unnecessary? It's quite a big job because there are a lot of little articles, letters, and exercises that I've written. Organising my vocab into groups will also be difficult because it's a bit all over the place.

I'm only writing exams in November so it's not last minute or anything and I'm wondering if there are better ways for me to take notes over the next 2 terms?

Get some proper paper for a start.

Re-organising notes should only take a couple of hours max if you get your head down.. Split it into vocab, articles, letters and exercises maybe one day then the next start to group them, then each week it's a 10 minute job to put that weeks work into the system.
