I am planning on applying for maths and economics in 2 university choices and Maths for the other 3 university courses.

Do you think this is a good idea? The thing I am worried about is that the person statement might not be good. For example, there will be random economics stuff for the 3 universities that I am only applying for maths.

As you're going for Maths for all of your choices, make your statement predominantly about Maths. You're other A-Levels are likely to creep into any personal statement you write so it wouldn't be weird having a bit about economics at all (I applied for 5 Maths courses yet still wrote about Physics and Spanish in my personal statement) so I wouldn't worry too much.

I myself am thinking about applying for maths at most of the 5 universities i apply to some of which will be maths with physics and maths with economics. I think even if i was applying for maths alone I'd still talk about my interest in economics as it requires lots of maths. Its not a bad idea at all
