a cut is a set of edges whose removal would create two seperate sections with the source in one section and the sink in the other.

I thought you could only cut through edges going from source to sink?

I was talking about a "cut" in a network. I'm not quite sure what your refering to.

I was talking about a directed flow network..I have also come across this question but I couldn't find the answer.

The definition:
"a cut is a set of edges whose removal would create two seperate sections with the source in one section and the sink in the other"

is extremely helpful, but we were taught that a cut cannot include edges that are flowing from the sink to the source, which kind of makes sense...so I was just wondering if that would effect the definition in the context of directed flow networks.

I think you can but may be wrong. You can cut a network to measure the "spill" so i'm assuming you can. Ill wait for someone with better knoledge that me answer this. Good question though.

Got it:
The capacity of a cut is the sum of the capacities of the edges (that intersect the cut) that flow in the direction from the source to the sink only.

The minimum cut equals the maximum possible flow through the network.
