It depends on what the graph is showing. If the domain doesn't include 0, then no.

That depends what you're plotting. Assuming the x-axis can equal zero, then yes, it should touch the y-axis.

If this is GCSE Level, I don't think there's any problem connecting it with the Y axis (but obviously don't cross the y axis since there's no such thing as negative time) since you will be doing some level of exercise when t = 0. Don't make it start at the origin for the sake of making it start at the origin though.
