If you haven't seen 'Together' (Swedish film from 2000) I'd definately suggest checking it out. Delicacy is another recent favourite of mine.
Also 'The Lives of Others' is absolutely brilliant.

Just watched 'Once Upon a Time in Anatolia' again... it's brilliant, a must watch (though be warned, it's nearly 4hours long, there's very little dialogue and nothing really 'happens').

The Seventh Seal
Les Diaboliques
Rashomon
Pretty much any film by Krzysztof Kieslowski, though I'd say No End is probably my favourite.
Noi Albinoi - This has a really good soundtrack by the director's band.

Would give +1 recommendations for The Lives of Others, City of God, The Seventh Seal and Downfall.
Other favourites:
Wild Strawberries (I think this and The Seventh Seal are the best Bergmans to start with, even though I've been impressed with all 6 or so I've seen)
Let the Right One In
Gommorah
La Haine
Seven Samurai
In the Mood for Love
Chungking Express

The Good, The Bad, and the Ugly; Oldboy; Crouching Tiger Hidden Dragon; Rashomon; and, as it looks like we're talking about language, Inglourious Basterds
