How uni's choose who they want on the course?

I know it sounds silly but I know grades obviously but would a uni pick someone because they like their personal statement?

Your grades are mainly to see if your capable and to make sure they pick the people who are some of the most capable of doing course and coming out with good result.

Very few universities care about your hobbies, unless they are relevant to the course for which you are applying. And personality only matters in so far as will you be a good student?

Grades are usually the main requirement. However, they are also looking at what you have done outside the classroom to expand the knowledge of the subject you are considering to apply to at university. Impressions from a personal statement also matter. Not to mention any useful extra-curricular activities you have done and skills you have gained from them (eg: independence, maturity, commitment, etc...). In general, they want to know if you are suitable for independent study at university and you have adequate knowledge for your course.
Universities pick students by:
-Academic capability (so grades)
-Passion for the course (demonstrated by work experience, reading around the subject, writing a good PS)

They may also discount students for other reasons, like having a poor reference or interviewing badly. In general, they are not very interested in your hobbies/extra curiculars unless they are somehow relevant to the course you are going to be studying.
