I really want to do Natural Sciences at Cambridge, but my grades weren't quite as good as I hoped . They are:
    A2 English Lit & Lang - A
    A2 Biology - B
    AS Maths - A
    AS Chemistry - A
    AS History - B
    BTEC Music - D*

I know they're strange, but I'm doing an extra year of A-Levels next year, so I'll continue maths and chemistry, and start AS physics and further maths. If I were to get better grades next year (i.e. A* in at least one of maths or chemistry) does anyone think I'd be in with a shot? Is it even worth me applying in October with these grades?

Cambridge typically require A*AA for NatSci, so you'll need to pull your grades up from what you currently have to have a realistic chance - but it's not completely out of the question. Speak to your teachers as well about what your predicted grades will be for the subjects that you continue with.

They say they want A*AA, but when I went there on an open day they said most applicants have at least two A*s :/ my friend who's got in to do English has five. I guess you're right about speaking to teachers though, I'll do that soon.
