Does anyone else not understand them? For example, I apparently got 120 UMS marks in Sociology Unit 2, what does that mean? Does that reflect the marks I got in that paper or is it different?

It directly corresponds to the amount of raw marks you got, say that paper is out of 100 marks they would look at it and say an A is worth 78 marks and an E is worth 49. Then they fill in the gaps for B, C and D. Then if you get 78 marks on the paper you get 80% of the UMS available. They do this conversion to compensate for the fact some papers are harder than others.
