I really want to do optometry in university however, the subjects I do are unrelevant for this course.
The A levels I am currently doing are:
English Lit
Psychology
ICT
does anybody have any suggestions? will I still be able to do optometry at uni?

Check the entry requirements for optometry courses, it's unlikely they'll give you an offer if they require sciences, you could do a science foundation year and then apply for optometry.

I think quite a lot do, I've never really looked into them but my friend is doing one at Plymouth and someone else I know missed his offer for a course at South wales (Aberystwyth) and was offered a science foundation year instead.

My friend applied to do the foundation life sciences course at Manchester, Cardiff and Bradford and begins her Optometry degree after the one year course is completed!

City also has a foundation degree course (ophtalmic dispensing)
What you have to do is choose the uni you want to do Optometry and apply for the corresponding foundation degree/year.
It is much harder (most often impossible) to get accepted to university A with a foundation from uni B

Opthalmic dispensing and Optometry are very different!

A Life Sciences foundation course would be much, much more appropriate!

Thats untrue. They are very similar.

Source: I am doing Optometry at City and Ophtalmic Dispensing students are with us in 30% of the lectures

30% similar perhaps, but life sciences foundation would be much more appropriate for the 70% not similar.

I'm not sure about this year, but they did for the past 2 apparently. (Unless she applied for something extremely similar under a different title)
