I currently have 4 choices in mind, but it's taking me absolutely ages to choose a 5th course at a good university that has lower entry requirements (so I can use as a back up). Can I send my UCAS application off with only 4 choices (& do inerviews) and then choose a 5th choice in a few weeks?

Yes, you can and it's often a sensible thing to do.

Oh how silly of me, I had no idea and have been worrying for ages about how I'll miss my college deadline as I can't choose a definite 5! Thank you.

You definitely can - you do it through Track. Just remember that the January 15th deadline still applies
