If I was to drop a subject at A level during year 12 (before any exams have been taken) would I have to declare this on my UCAS application? and would it state I had received a U in that subject? Is it the same for dropped BTEC subjects?

You have to declare all exams for which you have been given a grade. If you haven't taken any exams, then you haven't been given a grade. You wouldn't have any record that you have studied it. Even if you have completed coursework, unless you have been entered for the full exam, it won't count for anything. so it doesn't go on your UCAS.
