I’m trying to learn about the Kurdish culture since my boyfriend is Kurdish and I want to understand it better and so not to disrespect him or his family in any way. This is as well as learning to speak some basic Kurdish. If anyone can help please do or know any good links where I can find reliable information it would be a great help

False. There is no such region. There is only Turkish Kurdistan, Syrian Kurdistan, Iraqi Kurdistan and Iranian Kurdistan.

"It used to be an empire, and now is a region"

False. There was never any such thing as a "Kurdish Empire".
