Is it safe to say that Fehling's solution, Benedict's reagent and Tollen's reagent will only give positive results with (among organic species) aldehydes & alpha-hydroxy-ketones, 2,4-DNPH will only give positive results with aldehydes & ketones, potassium dichromate only with aldehydes and primary or secondary alcohols, and the I2/NaOH test will only give the positive result (CHI3 precipitate) for a methyl ketone, ethanol, ethanal, and methyl alcohol (CH3CH(OH)R)?

Yup it will be right as far as aldehydes and ketones are concerned.
