Work experience for an Environmental Management and Sustainability degree?

(Not sure if this is in the right forum???)

OK, so I'm on my second gap year and i'll be starting university in September (finally). I've just given up a job at a summer camp I was working at last year due to excessive anxiety and panic attacks during my training (and it's also probably pointless me going back there just to work behind the bar for minimum apprenticeship wage), but I really want to do something that will help my future.
So what kind of work experience could I do over summer for an Environmental Management and Sustainability degree? I don't mind moving somewhere else in the UK for the summer and I've had a lot of job experience in different areas.

Any suggestions?

Not sure if this is going to help much but I'm currently 1st year in BSc (Hons) Sustainable Environmental Management and I've managed to get work experience for the summer at the MET Office, unpaid but none the less a good experience. I'll be working with Environmental Advisers.
So maybe you could try emailing or calling a few similar places?
